Rubaiyat 2021

This wine pays tribute to the "Rubaiyat", which are the verses of the 11th century Persian wise man Ommar Khayyam, born near the city of Shyraz and who loved wine and life above all else.Vineyards at 1,300 m altitude. Slate soils, poor and stony.

Vinification: 50% direct pressing and 50% destemming and all together macerated for 4-5 days. After aging in large barrels (500 lit) for approximately 1 year and bottled in September 2022.
