L'Ambroisie 2008: it is a straw-colored wine made from Chenin. Grapes remained on straw for about 2 months and 4 days of pressing at Christmas. The juice is aged in a demijohn for about 1 year then in a very special 55-liter barrel that belonged to the Hacquet family.
Following the death of Joseph, his sisters Anne and Françoise "voluntarily" forgot their last vintage, the 2004 vintage. The wine remained in barrels for 5 years without topping up. The Hacquets are the deans of sulfur-free wine in Anjou.
In short, the wine in the barrels and especially the double barrel were extraordinary (it looked like the O2 Vigne) but in the small 55 L barrel the wine was tired, the aging was much too long for such a small container.
