The PNT 2017 is a selection of pinot noir from Alsace, that Clémentine and Gian planted at an altitude of 480 meters: a very steep south-east facing amphitheater overlooking the Bolsena lake. It is their first Guyot-trained vineyard, with a density of over 7000 plants per hectare. The grapes were harvested in late August at full maturity, then put whole in a French oak truncated cone vat. After about 10 days the grapes are crushed and allowed to ferment in contact with their skins for about three weeks. The wine obtained is decanted into 5 hl barrels where it matures for about 1 year, to then refine at least 3 more years in bottle before being released on the market.
