A blend grown on calcareous soil and blue marl just outside Escales, a medieval town in the northernmost part of the Corbières AOC. The “Vent Cers” or winds from the northwest bring cold, dry weather as a counterpoint to the warm, humid air from the Mediterranean to the east, known as the “Vent Marin". Destemmed and fermented for three weeks in concrete. Aged in flex tank. Bottled without the addition of sulphur.
