Rodolphe and Laetitia Ourliac started their journey in 1998 when they found a forgotten vineyard in Escales, close to Lézignan, in the Corbières appellation. During six years they did their training in winemaking while developing their land in the ancient manner, creating terraces. They planted Carignan, Syrah, Grenache, Grenache Blanc, Roussanne and Viognier.
Domaine Fond Cyprès was born in 2004. Laetitia and Rodolphe has since been working continuously to understand each parcel and grape variety in their vineyard as well as developing a style of winemaking that they believe in. That has paid off, today they are producing some of the best Languedoc wines, characterized by their attractive fragrance, elegant and silky texture as well as exquisite balance.
The way to success started when they met Frédéric Cossard, the Burgundy legend, in 2004, they went natural and without hurrying they took their time to learn about their parcels and grapes with the idea to present wines made from grapes that are identifying with the terroir.
The work in the vineyard is organic, the winemaking is traditional with natural yeasts, wines are aged in seasoned Burgundy barrels and bottled unfiltered without additions of sulfites.
Their parcels are quite special, like the unique micro climate of Bois St-Jaume where they grow Grenache, surrounded by olive trees and forest on three sides.
