Céline Gormally, who created her domain in 2008, manages around 5ha of vines with the help of her husband Steve. The fields are maintained without herbicides or pesticides using biodynamic principles and it is a reference to Passenans’ dolomitic rock, a salty magnesium-rich limestone. Celine has focused on wines made in the ouille style, as apposed to the sous voile method the Jura is often known for. Wild yeast fermentation is the norm, the whites are whole bunch pressed, fermented and aged in old oak barrels, reds are destalked, given three weeks macération and a short élevage in older barrels, and then bottled unfined, unfiltered with no SO2 whatsoever deemed necessary.
