Soil composition with a mixture of clay and cysts. 47 years old. Fermentation with whole bunch press. Oxidized and aged under flor for about 60 months without illage. The name comes from the fact that the oxidatively aged scent and the scent of fruits are united together and are associated with eau de vie. Only the high-quality part of white grapes was extracted.
Light amber color. While embracing the image of moderate oxidative aging from the scent, you can feel the condensed scent that makes you feel the depth such as dried fruits such as white raisins and brandy.
It is balanced to bring softness and wrap around the roundness of the fruit, while retaining the power, complexity and umami of 6 years of oxidative aging. The palate is gentle and light, with a hint of brandy-soaked fruitcake-like in aroma and flavor, and spices such as coriander, cumin, and cardamom, giving it a moderately oxidized flavor, umami, and depth. Even though it is not distilled, it has a refreshing eau de vie-like flavor that gives the impression that it is exactly as the name implies.
